      Beetroot, Carrot and Potato Cakes


 

Beetroot, Carrot and Potato Cakes

These cakes are really tasty, and work well as a main dish served with couscous salad and soured cream - as a breakfast with poached egg... or with a comforting dollop of creamy mash potato served with lots of hot red onion gravy. mmmmmm! Serves 4-8

ingredients:

     2 medium beetroots  peeled and grated

  • 2 medium carrots, grated
  • 2 handfuls grated or shredded potato (unpeeled is fine)
  • ½ medium onion, thinly sliced
  • 1 egg
  • ½ teaspoon salt, ¼ teaspoon pepper
  • 25g plain flour
  • Optional: chopped spring onion, garlic, chilli or herbs 3 tablespoons olive oil 
Beetroot = healthy you

Preheat oven to 150C/300F/gas2. In a large bowl combine the vegetables; mix in egg, salt and pepper. Add the flour and any extras; stir well to blend. Heat half the oil in a large frying pan over medium heat. Using 2-3 tablespoons of mixture per cake drop 4 cakes into the frying pan. Flatten each out with a spatula, and cook until just browned and cooked through, 3-4 minutes per side. Transfer to a tray in the oven and keep warm, then repeat with remaining mixture until finished.

Fabulous Remedy of the week

                                                   

                                                   Marigold 

                                      Calendula Officinalis

                                       

             The bright and cheerful marigold is a popular garden flower and is abundant at the moment  lots growing in the incredible edible beds, go and have a look... these pictures of marigolds are taken from my lovely little Todmorden garden. 

The Romans used marigolds to bring down fevers and applied the flowers to warts. In medieval times they remedied intestinal problems, liver complaints and insect bites. 

Gerald and Culpeper  recommended them to comfort the heart and lift the spirits, for inflammation of the eyes and 'trembling of the heart' .

Marigolds are astringent and antiseptic ,and taken internally are excellent for enhancing the immune system and treating a wide variety of infections, including flu and herpes viruses, fungal infections such as candida and pelvic and bowel infections. In the digestive system Marigolds relieve irritation, inflammation and diarrhoea, they enhance digestion,and absorption as well as liver function.




Externally,Marigolds are famous as a first aid remedy for cuts and grazes, sores and ulcers, burns and cold sores, to staunch bleeding, reduce infection and speed healing... wow! what an incredible flower..not only a must for every medicine cabinet, but sooo incredibly beautiful too.....

Product of the week

Bear Fayre - Be there or be Squayre - 26th November


We're having a Bear Fayre everyone!!
Make sure you come along on the 26th November to tantalise your tasting buds!


We will have..
CHEESE,      WINE       AND      CIDER       TASTING
                       

This fayre is part of the Water Street party, which will be filled with music, beautiful stalls and lovely food. 

Then there's the Christmas Light switch on! 
I wonder which celebrity it will be this year? 
fingers crossed for Brian Cox.

The shop and the cafe will be open till 9.
