       ~ SCRUMMY RECIPE ALERT.......

      Beetroot, Carrot and Potato Cakes

Beetroot, Carrot and Potato Cakes

These cakes are really tasty, and work well as a main dish served with couscous salad and soured cream - as a breakfast with poached egg... or with a comforting dollop of creamy mash potato served with lots of hot red onion gravy. mmmmmm! Serves 4-8

ingredients:

2 medium beetroots  peeled and grated

  • 2 medium carrots, grated
  • 2 handfuls grated or shredded potato (unpeeled is fine)
  • ½ medium onion, thinly sliced
  • 1 egg
  • ½ teaspoon salt, ¼ teaspoon pepper
  • 25g plain flour
  • Optional: chopped spring onion, garlic, chilli or herbs 3 tablespoons olive oil
Beetroot = healthy you

Preheat oven to 150C/300F/gas2. In a large bowl combine the vegetables; mix in egg, salt and pepper. Add the flour and any extras; stir well to blend. Heat half the oil in a large frying pan over medium heat. Using 2-3 tablespoons of mixture per cake drop 4 cakes into the frying pan. Flatten each out with a spatula, and cook until just browned and cooked through, 3-4 minutes per side. Transfer to a tray in the oven and keep warm, then repeat with remaining mixture until finished.

Remedies and Products of the month - Hayfever

It's getting lighter and brighter, and we are all getting a bit smilier :)
But for some of you are suffering with the onset of hayfever, maybe you could do with a little help to get that smile brighter.

Here are a few things that could get you back to "normal" again, without having to resort to drowsy antihistamines that could potentially damage your liver.

Natural remedies for that cheeky hayfever

Pukka's Peppermint and Pippali Capsules - for seasonal allergic rhinitis and hayfever with sneezing, itchy eyes, runny nose and wheezing. The warming spices helps to dry mucus secretions and stop sneezing and itching.

Vitamin C - a natural antihistamine and a great support for your immune system at the same time!
Delicious high vitamin C foods - bell peppers, strawberries, kiwi, kale, cabbage and oranges.

Herbs -Elderflower, ribwort and eyebright are anti-catarrhal and reduce your sensitivity to allergens, as do chamomile, nettles, and echinacea.

Reduce or cut out dairy products.

Eat local honey.

Essential Oils

Eucalyptus, Niaouli or Tea Tree oil on a handkerchief and use it when an attack occurs.

Pop in a have a chat with our lovely staff if you need any advice about your hayfever woes and any other ailment,

(My house smells lovely!)

Spinach and Coconut Dahl

Here's a quick and easy recipe to go with your 12 new spices,

Ingredients:
3 hand fulls of Suma red lentils,
A bunch of Local spinach,
Lots of grated coconut, (save some for serving)
1 onion
Lots of Garlic (to taste)
flat teaspoon of Dalit Turmeric,
a sprinkle of Dalit Cumin Seeds,
half a teaspoon of Dalit coriander powder,
2 teaspoons of Dalit chilli powder,
Ground white and black Dalit peppercorns (to taste)
Squeeze half a lemon,
1 teaspoon of Marigold's Bouillon,
A pinch of Suma asafoetida,
Hot water.

-Rinse the lentils and put in a medium sized pan.
-Pour boiling water over the lentils, and stir in the bouillon, asafoetida, and all other spices. Cover and leave on a medium heat for 5 minutes.
-Chop the onion, garlic and spinach and add to the lentils.
-Now add coconut and lemon.
-Put it on a low heat and cover.
-Keep checking back and stirring, and cook till it's soft and yummy.
I think you can keep it cooking for as long as you want and it'll get even tastier.

I enjoyed mine with a cup of Pukka Chai Tea, and to make it extra scrummy I popped in some extra cinnamon and a few cardamon pods ! (using 8 out of my 12 Dalit spices in one sitting, how many can you use?)

We have everything you need for a dahl, and much more!

Enjoy,
The Bears

Remedies and Products of the month

It’s a new year, and it’s the year of the DRAGON. It’s considered the luckiest and most empowering year in the Chinese Zodiac!

Are you ready to embrace the Dragon? Be colourful, energetic, powerful, and ambitious.

Remedies for the Dragon inside you
Start with a good body cleanse to get rid of 2011’s toxins with Pukka’s Clean Greens. This powerful blend of 12 chlorophyll rich nutrients including organic spirulina, kale sprouts and wheat grass juice helps the bodys natural ability to cleanse itself. Clean greens also helps us to cope with our polluted environment, and gives us a great boost this time of the year
To keep up with the Dragons energy levels, we’ll have some Spatone Liquid Iron and some Pukka Vitalise. Vitalise is a powerful formula of 22 nutritionally concentrated foods to help maintain energy levels and deal with the stresses of modern life. This colourful blend contains a full spectrum of organic extracts from 3 fruits, 4 vegetables, 6 herbs and spices, 3 seaweeds, 2 freshwater plants, 2 grass juices and flower pollens and so helps broaden the spectrum of energising foods you consume.

Pukka Skin Care Range
Now we are powerful and strong Dragons, we can’t forget about our skin. Dragons are perceived as scaly, angry monsters in Western culture, whilst in Asia they are beautiful, colourful creatures. I know which one I’d rather be.
We have a wonderful organic Ayurvedic skin care range with Pukka. All fantastic, but a here’s a few of our favourites.
Nourishing Brightener – Freshly ground Bilberrys and Almonds to gently exfoliate your skin.
